Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan. (My 9×5 pan is currently scratched out of commission and so I used two 8×5 pans which you can also do, but I prefer the one big 9×5 loaf.)
In a large bowl, combine flour, cinnamon, baking soda and salt. In a separate bowl, use an electric mixer to cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten, do not over-mix. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
I made this today and it is SO GOOD. Moist, yet crunchy. Delicious.
Today was just an all around good day. It started out with wonderful seminary with the wonderful sister Farrell and proceeded to school where I got to learn about the 1st amendment and watch a movie in anatomy. Off to golf practice, picked up my essay and then headed home! I came home to Jeffrey (this is not normal, I usually come home to an empty house) and he wanted a cookie so I ran to the store to get some ingredients. I thought: "I can squeeze these in before I am supposed to go to Andreas to get ready!" Boy did that backfire. I made the cookies and decided to drop some off at Leanne's and Allison's which made me even later. I had also forgotten a few necessary items. I got to Andreas thought and everything was great! We all got our hair done and for the first time ever I attempted to do my own makeup. Wow. That is a scary thought. I mean how hard can eye shadow and mascara be? Yeah that Is an understatement. But behold, all is well. I went with a neutral palate and it turned out fine. I also discovered the three year old mascara I was usin might need to be replaced soon. I think it's run it's course. Haha. So we got all dolled up and were ready to hit the red carpet! It was YW in Exellence time! Paige, Brooke, Lindsay, krista, Noel (not pictured) and I all went to the church. It was so cute inside and we got all ready to strut our stuff down the red carpet. It was so cute seeing all the beehives up to laurels wall down. The movie of all of us was so cute and well done. Brooke and Lindsay did an amazon job! Except for y part.., Brooke, the frame was crooked! Haha it was the funny part. They also left out the bloopers which would have made it just over the top. We then received our awards and then the candy bar was open! The beehives jumped on that and attacked that thing. Overall it was an amazing night and I am sad to say it was my last. I will miss these girls dearly next year when I am in college!
