Crazy for Banana Bread!

 
So lately my parents have been buying bananas like there is NO TOMORROW.  Its insane.  we have so many and most of the time they go bad or we blend them to make delicious smoothies, but my mom gave me the idea to make some more banana bread (like I did a couple of weeks ago)
 
So of course I headed on over to pinterest (my favorite website ever) and looked up banana bread and didn't find any recipes that I liked.  SO then I had the brilliant idea to search chocolate chip banana bread and I came out victorious! I found this amazing recipe and thought, "well I HAVE to try it now!"
 
What I didn't realize was how HUGE this recipe was, but I guess I should have because it called for 5 eggs, 2 cups of sugar, 3 cups of flour, 2 sticks of butter and 8, yes EIGHT mashed bananas!! hahaha well anyway, long story short, I start to make this and all the sudden the bowl on my kitchen aid is ALMOST FULL.  I had maybe one inch of extra room.  So i ended up making two big loaves AND three small loaves to give away!
 
And so I added my chocolate chips and peacans and let them bake! and let me just tell you, this recipe is a WINNER!!!!! YUM YUM.

and here is the recipe:

Yield=2 large loaves

2 cups sugar
1 cup butter, softened

1/2 cup buttermilk (I used 2% milk)
5 eggs (I use 4)
2 tsp. vanilla extract

1 quart mashed bananas, about 8 (ripe to overripe)

3 cups sifted flour (I never sift)
1 tsp. baking soda
1 tsp. table salt
1 cup nuts &/or 1 cup of choc chips

1. Preheat the oven to 350ºF. Butter two loaf pans. (I used PAM)

2. In a stand mixer, cream butter and sugar until light and fluffy.

3. Meanwhile, in a separate bowl, whisk together flour, baking soda and salt.

4. With the mixer on low, add the eggs one at a time, beating after each addition. Add the vanilla, buttermilk and THEN bananas.

5. Add the flour mixture and mix until just combined. Divide batter between the two prepared pans. Bake for approximately 1 hour.

6. Remove from oven and turn loaves out onto cooling rack immediately. Let cool.
